The Best Oatmeal Raisin Cookie Granola

July 12, 2024

When you want a cookie, but it’s 8 am – or you’re looking for a healthier option – this will be your new go-to. I prefer to skip store bought granola and make my own because a) it’s cheaper, b) healthier, c) tastes so much better and d) is so easy to make. You have the benefit of adding as many nutritionally dense ingredients as you’d like (chia seeds, pumpkin seeds, hemp hearts, any kind of nut) and adjusting the amount and type of fat and sweetener you use. Feel free to sub out any of the listed ingredients with a seed or nut you already have on hand. I prefer to bake mine undisturbed and allow it to cool a bit before gently breaking it into larger chunks for easy snacking.

Happy baking!

1/4 cup + 2 tablespoons avocado oil (or other neutral oil)

1/4 cup maple syrup

3 tablespoons brown sugar

2 teaspoons vanilla

1 cup chopped pecans

1 1/2 cups raisins

3 tablespoons ground flax seed

2 teaspoons cinnamon

1/2 teaspoon nutmeg

1/2 teaspoon salt

  • Preheat your oven to 325° F and line a large baking sheet with parchment paper.
  • In a large mixing bowl, whisk together the oil, maple syrup, brown sugar and vanilla.
  • Add the oats, pecans, flax seed, cinnamon, nutmeg and salt, mixing until evenly coated.
  • Press the granola mixture onto your prepared baking sheet and bake for 30 minutes, undisturbed, or until golden brown.
  • Let rest for 15 minutes, then sprinkle the raisins on top of the granola. Gently fold the granola over the raisins, leaving large pieces of granola intact.

Our days are numbered in this little house of ours Our days are numbered in this little house of ours 🥺 all of the house showings, packing and move prep has me donating items + bringing in a few new things that needed a refresh. I added a new set of bedding to our room from @onequince it feels so luxurious but is also very affordable. I’ve shopped @onequince for a few years now and I’ve never been disappointed! We have their bamboo sheets and European linen duvet on our bed in the color Sand - the color feels so rich and beautiful in person. The duvet also comes in a micro stripe that I have my eye on…maybe for the new house! #QuincePartner

I have a few iron obelisks but I wanted to make some that felt a little more wild and organic; this was a super cheap project and I love how they turned out! You could even use branches from around your yard. Just hot glue and cover any joints with twine. Instant charm 🫶

There is a beauty and ease that comes with life by There is a beauty and ease that comes with life by the sea, whether it be on northern or southern shores. Seashells are a quintessential beauty that are worn by living creatures, eventually discarded for us to enjoy or broken down to become one with the earth. They’re a reminder of the beauty of life and how powerful nature can be. And because of that, I think they’re a perfect addition to any room – no matter where you live!

We started planning and renovating this space abou We started planning and renovating this space about two years ago and I have a few takeaways now that we’ve lived with it:
- so glad we fit as much shelving into this space as possible
- storing our microwave in here is 👌
- I toyed with the idea of adding an ice maker in here…kinda wish I would have
- the wallpaper was the best splurge
- removing walls isn’t always the answer (we split a hallway in two to create this space)

You can read all about this project on the blog! Link in bio 🫶
